simple recipe for Vegan Caramelized Sesame and Ginger Cauliflower, inspired by Korean flavors:
Ingredients:
1 medium cauliflower, cut into florets
3 tablespoons sesame oil
3 tablespoons soy sauce (ensure it's vegan)
2 tablespoons maple syrup or agave nectar
1 tablespoon rice vinegar
1 tablespoon grated ginger
2 cloves garlic, minced
1 tablespoon sesame seeds (plus extra for garnish)
Green onions, thinly sliced (for garnish)
Instructions:
Preheat your oven to 400°F (200°C).
In a large bowl, mix together sesame oil, soy sauce, maple syrup (or agave nectar), rice vinegar, grated ginger, and minced garlic.
Add cauliflower florets to the bowl and toss until evenly coated with the marinade.
Spread the cauliflower on a baking sheet lined with parchment paper. Sprinkle sesame seeds over the cauliflower.
Roast in the preheated oven for 20-25 minutes or until the cauliflower is golden brown and caramelized, stirring halfway through.
Remove from the oven, garnish with additional sesame seeds and sliced green onions.
Serve the caramelized cauliflower over rice or enjoy it as a side dish. It's a delightful vegan twist with Korean-inspired flavors!
