Easy saucy ramen noodles (vegan recipe)
simple and saucy vegan ramen noodles recipe:
Ingredients:
2 packs of vegan ramen noodles
1 tablespoon sesame oil
3 cloves garlic, minced
1 tablespoon ginger, grated
4 cups vegetable broth
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon maple syrup
1 cup sliced mushrooms
1 cup sliced bok choy
1 carrot, julienned
Green onions and sesame seeds for garnish
Instructions:
Cook the ramen noodles according to package instructions, then drain and set aside.
In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
Pour in the vegetable broth, soy sauce, rice vinegar, and maple syrup. Bring to a simmer.
Add mushrooms, bok choy, and julienned carrot to the pot. Cook for 3-5 minutes until vegetables are tender.
Add the cooked ramen noodles to the pot and toss until well coated with the sauce and vegetables.
Serve hot, garnished with sliced green onions and sesame seeds.
