Ingredients:


2 cups mashed sweet potatoes

1/2 cup flour

2 eggs

1/4 cup milk

1/4 cup crumbled goat cheese

Salt and pepper to taste

Instructions:


Preheat your waffle iron according to manufacturer's instructions.

In a mixing bowl, combine mashed sweet potatoes, flour, eggs, milk, and goat cheese. Mix until well combined.

Season the batter with salt and pepper to taste.

Lightly grease the waffle iron with olive oil or cooking spray.

Pour enough batter onto the waffle iron to cover the surface.

Close the waffle iron and cook until golden brown and crispy.
